***Disclaimer:  We will leave most of the Fat on the Brisket, this is in order to preserve the integrity and flavor of the Smoked Meat, as well as the Seasoned Outer (Bark) Layer, allows the Meat to have a Longer “in the Fridge” shelf Life.   We do compensate by giving you around 1.25-1.5 pounds of actual Sliced Brisket (After Cooking Weight), so you can trim to your liking.  It also helps keeps the Meat nice and Moist During the Re-heating process.***
