Slowly Braises these short ribs overnight low and slow with Cabernet, House Stock and Mirepoix. After they are delicately Soft he strains all the jus and returns it back to the fire he reduces it into a hearty Demi with Cabernet Onion Jam. Accompanied by Smashed Sweet Potatoes, and a Dollop of Fresh Ricotta, Bon Appetit!
